Hello all you lovely people out there and not forgetting the little ones. It’s summer time again, feeling hot! hot! hot! remember that song? Well I do.
We all need something cold to refresh us, you might say cold drinks, but I’ve got something better and more interesting than that. Coffee ice cream!
That’s my favourite as it tastes so good I can’t help reaching out for more! I love the flavor of coffee as it smells so good and tastes divine.
Why choose coffee instead of other flavours?
We all need something that’s good for us in the long run, something that would give us more energy, good health and also keep us awake and alert.
I love the fact that coffee contains nutrients and antioxidants which protects us from different types of health problems. Coffee stimulates the mind thereby keeping us alert.
Coffee also contains lots of vitamins and minerals which can help keep skin young looking.
If you have depressed feelings, use coffee in your desserts, cakes and of course ice cream, you’ll notice the difference.
How do we make Coffee Ice Cream?
Let’s start off with the ingredients, you will need:
1 pot Double Cream
1 can Condensed Milk
2 to 3 tablespoons Instant Coffee or Espresso Powder
2 to 3 tablespoons Coffee Liqueur or Espresso Liqueur
I haven’t forgotten the sugar, eggs or milk, there’s no need for all that with this recipe. But you can add a pinch of cinnamon, vanilla flavouring, honey or nuts – it’s up to you.
A bit of cocoa powder even, but there’s no need, it’s delicious as it is!
Method
The good thing about this recipe is that you don’t need an ice cream machine – a whisk is all you need.
Using a bowl, add all of the ingredients and whisk really well until you see soft peaks forming, then empty contents in a container, cover with a lid and freeze over night.
That’s all there is to it! Easy isn’t it!
You can either serve your ice cream plain, add your favorite topping, or serve with a few cookies. Biscotti works well here.
This is the best recipe I’ve tried – it’s simple and so quick. You won’t have to buy ice cream any more now!!
